4 cups flour
2 1/2 cups sugar
4 tsp baking soda and cinnamon
1 tsp salt
2 cups oil
6 eggs, lightly beaten
4 tsp vanilla extract
4 cups grated, peeled apples
1 cup raisins, flaked coconut, shredded carrots and walnuts
In a large bowl, combine dry ingredients. In a separate bowl, mix oil, eggs and vanilla. Stir into dry ingredients just until moistened. Fold in remaining ingredients. Fill greased muffin cups two-thirds full. Bake at 350 for 25-30 minutes, or until toothpick inserted in center comes out clean.
NOTE: 1 cup dried cherries are a nice addition or substitute
