MARINATED GARDEN DELIGHT SALAD

2 carrots, shredded
2 stalks celery, diced
2 green bell peppers, diced
1 cucumber, cleaned, seeded and diced
2 tomatoes, chopped
1/2 red onion, chopped
3/4 cup Monterey jack cheese
1 (.7 oz) pkg dry Italian-style salad dressing mix
1/8 cup balsamic vinegar and white wine vinegar

In a bowl, combine vegetables and cheese. Prepare dressing according to package directions, however, substitute vinegars for have the vinegar the directions ask for. Drizzle dressing over the vegetables until well coated and toss. Chill for 30 minutes before serving.
