PEANUT BUTTER SANDWICH COOKIES

1 cup butter flavored shortening
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
1 tsp vanilla extract
3eggs
3 cups flour
1/4 tsp salt

Filling
1/2 cup creamy peanut butter
3 cups confectioners sugar
1 tsp vanilla extract
5 tbsp milk (up to 6 tbsp)

In a mixing bowl, cream the shortening, peanut butter and sugars. Add vanilla. Add eggs, one at a time, beating well after addition. Combine flour, baking soda and salt; add to creamed mixture. Shape into 1 inch balls and place 2 inches apart on ungreased baking sheets. Flatten to 3/8 inch thickness with a fork. Bake at 375 for 7 8 minutes or until golden brown. Cool on wire racks.

In a mixing bowl, beat filling ingredients until smooth. Spread on half of the cookies and top with another cookie. Yield: about 4 dozen
