CHILI AND CHEESE RICE CASSEROLE

5 cups cooked rice, brown or rice
6 oz green chili peppers, diced
1/2 cup onions, diced
1 1/2 cups grated monetary jack or cheddar cheese
1 1/2 tsp ground cumin
2 tsp garlic, minced

Combine ingredients in a bowl and stir well. Coat a casserole dish with cooking spray and pour mixture evenly into dish. Cover with foil and bake at 350 for 45-60 minutes. Serves 6
