Shelly's Recipe

SOFT RAISIN COOKIES

1 cup water
2 cups raisins
1 cup shortening
1 3/4 cups sugar
2eggs
1 tsp vanilla extract
3 1/2 cups flour
1 tsp baking powder, baking soda and salt
1/2 tsp ground cinnamon, and ground nutmeg
1/2 cup chopped walnuts

Combine raisins and water in a small saucepan; bring to a boil. Cook for 3 minutes; remove from heat and let cool (do not drain).

In a mixing bowl, cream shortening and sugar. Add eggs and vanilla. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in nuts and raisins. Drop by tspfuls 2 inches apart on greased baking sheets. Bake at 350 for 12 14 minutes. Makes about 6 dozen
