Shelly's Recipe

LIME GELATIN SALAD

1 (6 oz)pkg lime gelatin
1 cup boiling water
1 (8 oz) pkg cream cheese, softened
1/2 tsp vanilla extract
1 (11 oz) can mandarin oranges, drained
1 (8 oz)can crushed pineapple, drained
1 cup lemon lime soda
1/2 cup finely chopped pecans
1 (8 oz) carton frozen whipped topping, thawed and divided

Dissolve gelatin in water. In a mixing bowl, beat cream cheese until fluffy. Stir in gelatin mixture and beat until smooth. Stir in vanilla, oranges, pineapple, soda and pecans. Chill until mixture mounds slightly when dropped from a spoon. Fold in three fourths of the whipped topping. Pour into a 13x9 inch dish. Refrigerate for 3 4 hours or until firm. Cut into squares; garnish with the remaining whipped topping. Serves 16-20
