ITALIAN VEGETABLE SOUP

1 lb bulk Italian sausage
1 medium onion, sliced
1 (14 1/2 oz) can diced tomatoes, undrained
1 (15 oz)can garbanzo beans, rinsed and drained
1 (15 oz)can beef broth
1 1/2 cups water
2 medium zucchini, cut into 1/4 inch slices
1/2 tsp dried basil
Grated Parmesan cheese

In a 3 quart saucepan, cook sausage and onion; drain. Stir in tomatoes, beans, broth, water, zucchini and basil. Bring to a boil. Reduce heat and simmer 5 minutes or until the zucchini is tender. Sprinkle serving with Parmesan cheese. Serves 6-8
