HERBED PORK ROAST

Category: Roasts/Tenderloins - Pork

1 cup soy sauce
2 tbsp lemon juice
2garlic cloves, minced
2 tsp dried tarragon and basil
1 tsp pepper, chives and sage
1 (3 1/2 to 4 lbs)boneless pork loin roast

In a large, resealable, plastic bag, combine the first 8 ingredients. Add roast; seal and turn to coat. Refrigerate overnight, turning bag several times. Remove roast from bag and place in the roasting pan; pour marinade over roast. Cover the pan and bake at 325 for 2 to 2 1/2 hours or until a thermometer reads 160F. Let stand 15 minutes before slicing. Serves 6 8
