COMPANY WILD RICE

Category: Rice/Risotto

1 (6 oz) pkg wild rice
1/4 cup butter, cut into pieces
1 (8 oz) pkg sliced fresh mushrooms
3 green onions, chopped
1/2 tsp salt
1 (14 1/2 oz) can chicken broth
2 tbsp sherry
1/2 cup sliced almonds, toasted

Crock pot method: Combine first 7 ingredients in a crock pot; cover and cook on HIGH for 3 hours. Drain excess liquid, if necessary. Fluff rice with a fork; sprinkle with almonds.

Stovetop method: Melt butter in a saucepan over medium heat. Stir in rice; cook, stirring occasional, 5 minutes. Add mushrooms and next 4 ingredients; bring to a boil. Cover, reduce heat, simmer 1 hour and 5 minutes or until rice is done; drain excess liquid if necessary. Fluff rice with a fork; sprinkle with almonds.
