SHRIMP BUTTER
Category: Spreads -- Cold
1/2 lb cooked, peeled, deveined shrimp, fresh or frozen, thawed
1/2 cup butter, softened
2 tbsp lemon juice
2 tsp horseradish
1/4 tsp salt
1/8 tsp ground nutmeg
1/8 tsp liquid hot pepper sauce
Chopped fresh parsley, garnish
Assorted party breads, crackers or vegetables
Grind shrimp; set aside. Cream butter; add lemon juice, horseradish, salt, nutmeg, pepper sauce, and shrimp. Mix thoroughly. Pack shrimp butter in a 1 1/2 cup mold or two (6 oz) custard cups. Chill.
TO SERVE: Unmold shrimp butter onto serving dish. Sprinkle with parsley. Serve with bread, crackers or raw vegetables.
