FRIED BROWN RICE WITH PORK

1/2 lb lean boneless pork
2 tbsp dry sherry and soy sauce
1/8 tsp pepper
1/2 cup chopped onion
1 egg, beaten together with 1 tbsp cooking oil
1 clove garlic, minced
1 cup frozen peas, thawed
2 cups cooked brown rice (chilling the rice before adding to stir-fry prevents it from absorbing more liquid and becoming gummy)
Partially freeze pork and cut on bias into bite-size pieces. Stir together next 3 ingredients; set aside. Preheat wok. Pour beaten egg into wok and cook without stirring 2-3 minutes (quickly cut cooked egg into bite-size strips and remove from wok.)
Return wok to high heat and add 1 tbsp cooking oil. Stir-fry garlic for 15 seconds. Add onion and stir-fry until tender; then removed onion. Add pork and stir-fry until it is no longer pink, about 3 minutes. Stir in sauce, rice and peas. Cook and stir 1 minute. Add egg strips and onion. Cover and cook 1 minute. Serve immediately.
