NORTHSHORE JAMBALYA

1/2 lb pork tenderloin, chopped
1/2 lb smoked sausage, cut into 1/2 inch slices
1/4 cup vegetable oil
1/4 cup flour
1 cup chopped onion and celery
1 bunch green onions, chopped
4 clove garlic, minced
1 tbsp chopped parsley
1/2 tsp Hungarian parsley
1/2 tsp dried thyme
1/4 tsp red pepper
6 cups uncooked rice

Cook meats until browned; drain well. Set aside. Cook rice according to package direction; set aside. Heat oil in a Dutch oven, add oil and flour, and cook, stirring constantly, until rue turns dark brown. Stir in onion, celery, 1/2 cup green onion, garlic and parsley.

Cook over medium heat for 10 minutes, stirring frequently. Add tomato sauce and seasonings. Reduce heat, simmer 5 minutes, stirring occasionally. Stir in meat and remaining green onions. Cook until thoroughly heated. Add cooked rice and mix well. Simmer 5 minutes, uncovered.
