BAKED APPLE FRENCH TOAST

8 eggs
3 cups milk
3 tbsp vanilla extract
3-4 large green apples
1/2 cup butter and packed brown sugar
1 tbsp water
6-12 slices favorite bread
Melt butter and add sugar and water. Slice apples and simmer in butter mixture for 1-2 minutes. Pour into bottom of a 13x9 inch baking pan and let cool.
Beat eggs, milk and vanilla extract. Place sliced bread over apples to cover whole dish. Pour egg mixture over all. Be sure bread is we. Sprinkle with cinnamon. Bake at 350 for 40-50 minutes or until golden brown and puffy.
NOTE: Can be made night before and refrigerated. In the morning, take out of refrigerator at least 30 minutes before baking as directed.
