CRISPY WONTONS WITH CRAB & CHEDDAR

30 (3 inch) round won ton wrappers
Oil for frying
20 oz crab meat, well drained
3/4 cup minced celery
3 tbsp minced chives
4 tsp lemon zest
3/4 cup mayonnaise
2 tbsp lemon juice
1/4 tsp black pepper
8 oz medium cheddar cheese, shredded (2 cups)

Avocado Creme:
1/2 cup avocado pulp
1/4 tsp salt
1 tbsp lemon juice
1/4 cup cream

Fry wonton wrappers in 350 oil until light golden brown. Drain on paper and set aside.

In medium bowl combine crab, celery, chives and lemon zest. Stir in mayonnaise, lemon juice and pepper.

In small bowl, puree avocado pulp. salt, lemon juice and cream. Refrigerate until ready to use.

For one serving:
3 wonton wrappers
1/4 heaping cup crab mix
3 tbsp shredded cheese
1 tbsp avocado creme
Chopped chives for garnish

Preheat oven to 400. Top each wonton with equal amount of crab mixture. Sprinkle each with 1 tbsp shredded cheese. Place on baking sheet in oven and heat just until cheese is melted. Arrange wontons on a plate with a spoonful of avocado creme. Makes 10 appetizers (30 wontons)
