EASY LEMON BARS

1 pkg lemon cake mix with pudding (if one cant be found, use lemon cake mix and a small pkg lemon pudding)
1 egg
1/2 cup vegetable oil
1 (8 oz) pkg cream cheese, softened
1/3 cup white sugar
1 tbsp lemon juice

Preheat oven to 350. Pour cake mix in a large bowl. Add the egg and oil; mix until well blended. (Mixture will be dry.) Reserve 1 cup for the topping and pat the rest into a 13x9 inch baking dish. Bake for 15 minutes. Set aside to cool. Meanwhile, in a medium bowl, beat the cream cheese with sugar and lemon juice until smooth. Spread mixture evenly over the baked crust. Crumble with reserved cake mix mixture over the top. Bake for 20-22 minutes or until filling is set and topping is lightly toasted. Cool before cutting into bars. Refrigerate leftovers.
