1/2 cup red onion, thinly sliced
1/2 cup carrot, peeled into ribbons
1 cup English cucumber, peeled into ribbons
7 tbsp rice wine vinegar
2 tsp sesame oil
2 tbsp black sesame seeds
1 tsp salt

In a medium bowl, combine rice wine vinegar, sesame oil, sesame seeds, and salt. Whisk to emulsify. Add red onions, carrots, and cucumber, and toss to coat. Chill in the refrigerator before serving.
