ASIAN PORK RIBS (Crock pot)

1 (14 oz) can beef broth
1/2 cup water
1/4 cup rice wine vinegar
1 (2 inch) piece fresh ginger, peeled and grated
1 cup dried sliced shitake mushrooms (1 oz)
1/4 tsp red pepper flakes
1 tbsp Chinese 5-spice powder
1 tsp ground ginger and chili powder
1 tbsp toasted dark sesame oil
2 full racks pork back ribs (about 4 lbs total)
3/4 cup hoisin sauce, divided

Stir together first 6 ingredients in a crock pot. Stir together spices on sesame oil to form a paste. Blot ribs dry with paper towels. Rub both sides with paste and brush with half of hoisin sauce.

Place ribs in crock pot with prepared liquid, do not stir. Cover and cook on LOW for 8-10 hours or on HIGH for 5-6 hours or until meat is tender when pierces with a fork. Remove to a platter and brush lightly with remaining sauce. Keep warm until serving. Serves 4
