HAM AND POTATOES AU GRATIN CASSEROLE

2 eggs, beaten
3 tbsp butter
2 small onion, thinly sliced
3 tbsp flour
2 tbsp olive oil
1 3/4 cup milk
1 (10 oz) pkg frozen spinach, thawed and squeezed dry
1 1/2 cups shredded cheddar cheese
12 oz ham, cut into strips
1/4 cup dry sherry or milk
1 (12 oz) pkg frozaen shredded hash brown potatoes
1 tbsp dijon mustard
1/4 cup grated parmesan cheese
1/4 tsp nutmeg and pepper
In a medium bowl; beat eggs; set aside. In a large saucepan, melt butter; stir in flour. Add milk and cook. Stir until bubbly and thickened. Remove from heat. Stir 1 cup of mixture into beaten eggs; return mixture to saucepan. Stir in cheese, sherry, mustard, nutmeg and pepper. Set aside.
In a large skillet cook onion in hot oil until tender, about 5 minutes. Stir in spinach; set aside.
Place half of ham in an ungreased 2 quart casserole dish. Break up hash brown patties and place half on top of ham. Spoon half cheese to on top of potatoes. Spoon the spinach mixture on top of cheese in a dish.
Repeat layers ending with sauce. Top with parmesan cheese. Bake, uncovered, at 350 about 30 minutes. Let stand about 10 minutes before serving.
