GREEK PASTA

16 oz fettuccine, cooked al dente
1/2 cup olive oil
4 cloves garlic, chopped
1 cup olives, wedged
1 cup fresh tomato, peeled, seeded and chopped
1 tsp dried oregano
Salt and pepper, to taste
8 oz feta cheese, crumbled
Italian parsley sprigs
While pasta is cooking, heat oil over medium heat, add garlic and saute briefly. Turn off heat. Add olives, tomatoes and seasonings. (Be careful about the amount of salt used because of the feta.)
Drain pasta and add immediately to pan. Add feta, return to stove and toss well over medium heat until heated through. Serve, garnished with parsley.
