8 medium red potatoes
1 envelope ranch dressing mix
12 oz jar pickled jalapeno pepper slices, drained
2 cups EACH cheddar and Monterey jack cheese
2 cups sour cream
6-8 green onions, chopped

Boil potatoes until just tender. Drain; cool slightly. Cut into 1/4 inch slices. Place in a single layer on three greased cookie sheets. Sprinkle each with salad dressing mix, a jalapeno slice and cheese. Bake, uncovered, at 350 for 10-12 minutes. Top with sour cream and green onions.
