DUTCH POTATO SALAD

2 1/2 lbs red potatoes, peeled and cut into 1/2 inch cubes
5 slices bacon, cooked and crumbled
5 oz milk cheddar or Monterey jack cheese, julienned into 1 inch pieces
1/2 cup green onions or scallions
1 1/2 cups mayonnaise
1/2 cup cream
1/4 cup mustard
1/2 tsp pepper
Salt, to taste

Cook potatoes until tender; drain. In a very large bowl, combine potatoes and next 3 ingredients. Combine remaining ingredients and add to potatoes. Toss to coat. Taste for additional salt. Cover and chill for 6-24 hours. Serves 12
