WILD RICE STUFFED FISH FILLETS

1/2 cup wild rice (3 oz)
3 cups water
4 boneless fish fillets
Salt and pepper, to taste
1/4 cup finely chopped celery and onions
1 tbsp butter

1/4 cup dry bread cubes (1/4 inch)
1/2 tsp lemon peel finely shredded
4 tsp lemon juice
1 tsp parsley flakes
1/4 tsp salt
1/4 tsp curry powder
Dash of pepper
2 tbsp butter
4 lemon slices
1 tsp parsley flakes

Combine wild rice, water and cook (basic recipe), set aside. Sprinkle fillets with a little salt and pepper. Saute celery and onions in 1 tbsp butter. Add bread cubes, cooked wild rice, lemon peel, lemon juice, parsley flakes, salt, curry and pepper. Mix well. Wrap 1/4 of the stuffing inside each fillet; secure with toothpicks.

Place fillets in greased baking pan; brush with 1 tbsp butter; bake uncovered for 20 minutes at 350, or until fish is done. Remove from oven; brush with remaining butter and garnish with lemon slices and parsley flakes. Serves 4.
