GORGONZOLA CHIPS

Thick-cut potato chips
1/2 cup heavy cream
Pinch of salt and pepper
Gorgonzola cheese
In a small saucepan over medium heat, bring the heavy cream and a pinch of salt and pepper to a simmer. Slowly whisk 2 oz of Gorgonzola into the hot cream and continue whisking over heat until sauce is thick. Remove from heat and set aside.
Heat oven to 350. Pile thick-cut potato chips on an ovenproof plate, cover chips with the desired amount of crumbled Gorgonzola cheese, drizzle warm Gorgonzola cream over the top and bake until cheese is bubbling hot. Serve immediately.
