Crab Cakes

1 lb crab meat, picked clean
1/4 cup finely, diced red bell pepper
1/2 cup finely diced green onion stems
1/8 cup finely diced celery
1 tbsp finely minced garlic
1/2 to 3/4 cup Italian seasoned bread crumbs (use only enough to hold crab cake together)
1/4 cup mayonnaise
1 egg
1 tbsp Old Bay Seasoning
1 tsp mustard
1/2 tsp Cajun seasoning
Dash Worcestershire sauce
White pepper and paprika, to taste
Combine first 6 ingredients. In a separate bowl, combine remaining ingredients and pour into crab meat mixture. Mix until everything is well blended and holds together and form into cakes/patties. Fry in butter until golden brown on both sides. Drain on paper towels and keep warm in the oven at 250 until all are fried. (The can also be baked at 425-450 until just golden brown.) Makes 16-18 cakes.
