PORK CHOPS AND RICE

6 (1 to 1 1/2 inch thick) pork chops
2 tbsp cooking oil
1 cup rice, uncooked
1 envelope onion soup mix
1 (8 oz) can mushrooms, reserve liquid
2 tsp diced red bell pepper
Hot water
Brown chops in oil. Spread rice in bottom of a long baking dish. Sprinkle soup over rice, reserving 1 tbsp for top. Drain mushrooms, spread mushrooms and pepper over rice. Add hot water to mushroom liquid to equal 3 cups and pour over rice. Arrange chops on top of mixture and sprinkle chops with reserved soup mix. Cover tightly with foil and bake at 350 for 45 minutes or until chops are tender. Remove foil and bake 10 minutes or until liquid evaporates.
NOTE: This is also good using chicken.
