CREAMY SHRIMP LINGUINE

3/4 lb linguine, cooked al dente
2 tbsp olive oil
1/4 cup sliced green onions and chopped fresh parsley
2 clove garlic, minced
2 tsp basil
1/4 tsp pepper
1 cup chicken broth
1 (15 oz) container ricotta cheese
1 lb uncooked shrimp, peeled and deveined
Salt
Grated parmesan cheese
While pasta is cooking, heat oil, onions, parsley, basil and pepper. Cook, stirring until onions are soft. Add broth and boil until reduced by half. Add ricotta cheese, stirring to break up lumps. Add shrimp and cook 10 minutes or until shrimp are pink. Season with salt. Serve over noodles. Top with cheese. Serves 4
