3/4 cup
1 tbsp cornstarch
1/4 cup brandy
1 tbsp lemon juice
1/2 tsp grated lemon zest and ground nutmeg
2 lbs (about 18-20( ripe apricots, peeled, pitted and chopped, about 4 cups
1 1/2 cups cake flour
1 1/2 tsp baking powder
1/4 tsp salt
4 tbsp cold unsalted butter, cut into pieces
2 egg yolks
1/2 cup sour cream
1 tbsp sugar
Preheat oven to 400. Mix 3 tbsp of the sugar, cornstarch and next 4 ingredients in a 2 or 3 quart baking dish. Stir in apricots and toss to evenly coat.
Put flour, remaining sugar, baking power and salt into a large bowl; stir to mix well. Add butter and cut in until mixture looks like coarse crumbs.
Beat yolks with sour cream with a fork to blend. Pour over flour mixture and stir with a fork just until the dough is moistened. Drop spoonfuls of the batter over the apricots. Sprinkle the cobbler with the sugar.
Bake for 30-35 minutes or until the topping is golden brown and the filling is bubbling. Let cool 10 minutes before serving.
