PORK CHOPS BRAISED IN WHITE WINE

1 tsp dried sage and rosemary
2 tsp finely chopped garlic
Salt and pepper, to taste
4 (1 inch thick) center cut pork chops
1 tbsp olive oil
2 tbsp butter
3/4 cup dry white wine
Combine seasonings and press onto both sides of chops. Melt butter and oil in a skillet and brown chops on each side, about 2-3 minutes. Remove to a platter. Pour off all but a thin film of fat from skillet. Add 1/2 cup wine and bring to a boil. Return chops to the skillet, cover and simmer. Cook for 20-23 minutes, basting frequently. Transfer chops to serving platter.
Pour remaining 1/4 cup wine into the skillet. Boil, scraping up any browned bits, until reduced to a few tbsp of syrup glaze. Pour sauce over chops and serve.
