VOKDA CREAM PASTA

1 tbsp olive oil and butter
2 clove garlic, minced
2 shallots, minced
1 cup vodka and chicken stock
1 (32 oz) can crushed tomatoes
Coarse salt and pepper, to taste
16 oz penne rigate pasta
1/2 cup heavy cream
20 leaves fresh basil, shredded or torn
Heat a large skillet and add first 4 ingredients. Gently saute shallots for 3-5 minutes. Add vodka to pan and cook until vodka is reduced by half, about 2-3 minutes. Add stock and tomatoes. Bring to bubbling and reduce heat to a simmer. Season with salt and pepper.
While sauce simmers, cook pasta according to package directions. Stir cream into sauce. When sauce returns to a bubbly, remove from the heat. Drain pasta and toss into the sauce and basil leaves. Serves 4
