SQUASH CASSEROLE

6 to 8 medium yellow squash
1 medium Vidalia onion, chopped fine
1/2 cup butter
3 large eggs, beaten
1 can cream of mushroom soup
1 cup crushed soda cracker crumbs
1 cup grated mild cheddar cheese
Extra grated cheese, for topping

Preheat oven to 350. Wash squash, cut up, and cook in a skillet with onion until done. Add other ingredients except cheese for topping and mix. Pour into a casserole dish and sprinkle with the extra grated cheese for the topping. Bake for 30 minutes.
