ROASTED AND SPICED BUTTERNUT SQUASH

2 (1 3/4 lb) butternut squash, enough cubed for 4 cups squash
1/4 lb packed brown sugar
1/4 tsp ground cinnamon and nutmeg
1/4 cup butter, melted
2 tsp lemon juice

Preheat oven to 400. Cut squash in half lengthwise; remove and discard seeds. Peel squash and cut into cubes. Place in a lightly greased 2-quart baking dish. Stir together brown sugar, cinnamon and nutmeg. Sprinkle over squash. Drizzle with butter and lemon juice. Bake for 40 minutes or until tender, stirring occasionally. Serves.
