4 baking potatoes, cut into 1/8 inch to 1/4 inch slices
2 onions, peeled and cut into 1/4 inch slices
2 tbsp olive oil or cooking spray
1/4 tsp salt
1/2 tsp pepper
1 tsp paprika

Preheat oven to 425. Lightly spray several baking pans with cooking spray. Spread potatoes in a single layer. Scatter onion slices over potatoes. Brush with oil or lightly spray with cooking spray. Mix together 1/3 tsp salt, pepper and paprika. Sprinkle on potatoes and onions. Bake for 20 minutes or until potatoes are golden brown.
