HAMBURGER STEAKS

Category: Steaks - Beef

2 lbs lean ground beef
1 medium onion, finely chopped
1 egg, lightly beaten
2 egg yolks, lightly beaten
Salt and pepper, to taste
7 tbsp unsalted butter
2 oz brandy

In a large bowl, combine and blend first 7 ingredients except brandy. Mold into six steaks.

In a large frying pan, heat 4 tbsp butter. Add the beef and brown about 3 minutes on each side. Transfer to a hot serving dish. Add the remaining butter and brandy to pan and cook until most of the brandy has evaporated. Spoon over the steaks and serve.
