LOADED BEEF STEW (Crock pot)

8 bacon strips, diced and cooked until crisp
3 lbs stew meat, cut into 1 inch cubes
6 medium carrots, peeled and cut into chunks
6 tomatoes, peeled and cut into wedges
4 potatoes, peeled and cubed
3 cups cubed peeled butternut squash
2 green bell peppers, chopped
2 tsp dried thyme
2 clove garlic, minced
2 (14 1/2 oz) cans beef broth
6 cups chopped cabbage
1/2 tsp pepper
Refrigerate cooked bacon until ready to serve stew. In skillet bacon was cooked in, brown beef in patches.
While beef is browning, add vegetables and seasonings in a crock pot. Top with beef and then broth. Cover and cook on low for 8 hours.
Stir in cabbage and pepper. Cover and cook on high for 30 minutes or until cabbage is tender. Sprinkle bacon over each serving.
