ITALIAN SAUSAGE PASTA

4 quarts water
2 tbsp olive oil
1 lb Italian sausage
1 yellow onion, chopped
4 cloves garlic, minced
1 cup dry white wine (optional)
1/2 cup sun dried tomatoes
1 tbsp fresh oregano, or 1 tsp dry
1 lb pasta of your choice
Grated Parmesan, as garnish

Bring water to a boil. Meanwhile, heat olive oil in a skillet. Remove sausage from the casings, crumble into skillet, and brown. Set aside sausage, then brown onion and garlic. Add wine (or water), then the sun dried tomatoes, drained and chopped. Add sausage and oregano. Cook pasta, then toss with the sauce and top with Parmesan. Serves 6
