PASTA WITH SHRIMP, PINE NUTS AND MUSHROOMS

Juice of 1 lemon
1 tsp grated lemon peel
4 tbsp butter, softened
1 lb vermicelli, cooked al dente
1 cup butter
8 oz mushrooms, sliced
4 tsp garlic, chopped
1 lb medium shrimp; cleaned and peeled
2 cups fresh spinach leaves
8 tsp pine nuts
2 tsp salt and pepper
4 tsp bread crumbs
1 lemon, sliced
Chopped parsley, garnish
Grated parmesan cheese

Prepare lemon butter by whipping together the first 3 ingredients. Chill. While pasta is cooking, Melt butter in a skillet and saute mushrooms. Add garlic and shrimp and cook just until shrimp begins to color. Add spinach and nuts. Stir and add prepared lemon butter, salt and pepper. Bring to a simmer, cooking just until shrimp is done. Add pasta and stir to incorporate. Serve with grated parmesan cheese.
