BABY ARTICHOKE SALAD

16 artichoke hearts
4 tbsp lemon juice
1/4 cup olive oil
Salt and pepper, to taste
1 tsp finely chopped fresh oregano
2 bunches arugula, well washed
2 oz Parmigiano-Reggiano cheese, shaved

Drain artichokes and slice them lengthwise as thin as possible. Place in a bowl and sprinkle with 1 tbsp lemon juice. Whisk together remaining lemon juice, and next 4 ingredients. Pour over artichokes and toss.

Place arugula among 4 salad plates. Top each with artichoke mixture and sprinkle with shaved cheese. Serve.
