8 oz uncooked lasagna, cooked al dente
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
2 cups diced or ground cooked turkey or chicken
2 cups shredded cheddar cheese
1 can cream of mushroom soup
1 cup sour cream
3/4 cup sliced mushrooms
1/3 cup finely chopped onion
1/4 tsp pepper
1/2 tsp salt
1/2 cup grated parmesan cheese

While pasta is cooking, mix together meat, spinach, 1 1/2 cups cheddar cheese, next 7 ingredients. Toss mixture until well blended. Layer lasagna noodles in a 13x9 inch baking pan that has been coated with cooking spray. Spread half the meat mixture over noodles and top with 2 tbsp parmesan cheese. Repeat layering with noodles and sprinkle with remaining cheddar cheese and parmesan cheese. Cover with foil and bake at 350 for 30 minutes. Uncover, bake 10 minutes or until lightly browned and bubbly. Let stand 10 minutes before cutting to allow to settle for easier handling.
