SPICY BLACK OLIVES WITH GARLIC AND HERBS

1 lb black olives
3 clove garlic, minced
2 small jalapeno peppers, halved lengthwise and weeded
4 sprigs fresh thyme and/or rosemary
olive oil

In a large bowl, stir together olives and garlic. Layer them in a 1 quart glass jar with tight-fitting lid, interspersing with pepper and herbs. Add oil to cover. Secure the lid and refrigerate up to 2 weeks.
