3 cups cornstarch
1 1/2 cups flour
2 tsp garlic salt and paprika
1/2 tsp salt and pepper
24 oz beer
4-6 onions, 4 inches in diameter or larger
Seasoned flour (below)
Dipping sauce (below)
Oil for frying

Mix first 6 ingredients until well blended. Add beer. Mix well. Cut about an inch off top of onions and peel. Cut 12-16 vertical wedges into onion, but do not cut through the bottom. Remove about 1 inch of petals from center of onion. Dip onion into seasoned flour and removed excess by shaking the onion. Separate petals to coat through with batter. Mix batter again after standing to blend ingredients. Gently place prepared onion in the fryer basket in hot oil and deep fry at 275-400 degrees for 1 to 1 1/2 minutes. Turn over and fry another 1 to 1 1/2 minutes longer, or until golden brown. Drain on paper towels. Place onion upright in a shallow bowl and remove center core with circular cutter or apple core. Serve hot with dipping sauce placed in the center of the onion ring.

Seasoned Flour: Combine 2 cups flour, 4 tsp paprika, 2 tsp garlic powder, 1/2 tsp pepper and 1/4 tsp cayenne pepper.

Dipping sauce: Combine 1 pint mayonnaise, 1 pint sour cream, 1/2 cup chili sauce and 1/2 tsp cayenne pepper. Mix well.
