PEANUT BUTTER CHOCOLATE BARS

8 medium packaged chocolate chip cookies
1/4 cup melted butter and ½ cup softened butter, divided
2 1/2 cups milk chocolate chips, melted and divided
1 1/2 cup creamy peanut butter
3 cups sugar
2 tsp vanilla extract

Preheat oven to 325. In a food processor, blend cookies until finely ground. Add 1/4 cup melted butter and mix until combined. Press onto bottom of an 8 inch square baking pan. Bake for 10 minutes, cool to room temperature. Pour half the melted chocolate over curst and smooth out. Refrigerate until firm, about 15 minutes. Keep remaining chocolate warm.

Blend peanut butter and softened butter until smooth. Gradually add sugar and vanilla, beating until smooth. Spread mixture over chilled chocolate, then finish by pour remaining warm chocolate over filling and spreading until smooth. Refrigerate at 1 or until firm. Cut into bars.
