SAVORY BEEF AND CHEESE ROLL-UPS

1 lb roast beef, thinly sliced
2 (6 oz) pkg garden vegetable flavored soft spreadable cheese
4 (10 inch) flour tortillas
1 cups shredded carrots and Monterey jack cheese
8 leaves green leaf lettuce
Carrot slivers

Spread cheese over one side of tortillas; top with carrots and cheese. Layer lettuce and roast beef over all, leaving a 1/2 inch border around edge. Roll up tightly; wrap in plastic wrap and refrigerate at least 30 minutes before. To serve, cut each tortilla into 1 inch slice.
