TURKEY MINI-MUFFINS

1 (12 oz) pkg cornbread mix
3/4 cup sour cream
1/2 tsp dried rosemary, crusted
1 egg, beaten
5 thin slices smoked turkey
3 tbsp whole-berry cranberry sauce

Preheat oven to 400. Grease a mini-muffin pan. In a medium bowl, combine first 4 ingredients and stir just until blended. Spoon into muffin cups and bake for 15 minutes or until golden brown. Cool slightly in pan before turning onto wire rack to cool.

Slice each muffin horizontally in half. Cut each slice of turkey into quarters. Fold turkey slices to fit on bottom half of muffing; top with some sauce and remaining muffin halves to make sandwiches. Makes about 20
