LEMON SQUARES

Crust
1 cup sifted cake flour
1/4 cup confectioners sugar
2 oz cream cheese
3 tbsp vegetable oil

Filling
3 egg whites
3/4 cup sugar
1 1/2 tbsp grated lemon zest
2 tbsp flour
1/2 tsp baking powder
1/4 tsp salt
1/3 cup lemon juice
Confectioners sugar, for dusting over top

Preheat oven to 350. Crust: Coat inside an 8 inch baking pan with cooking spray. In a large bowl, stir together flour and sugar. Cut cream cheese into mixture until crumbly. Gradually add oil, stirring with a fork. Toss with fingertips until evenly moistened. (This mixture will be crumbly.) Press into bottom of prepared ban and bake for 20-25 minutes or until light golden.

Filling: In a bowl, beat first 3 ingredients until smooth. In a small bowl, stir together dry ingredients and add to egg mixture; beat until blended. Beat in juice. Pour over hot crust and bake about 20 minutes or until top is light golden and set. Let cool in rack. Spray a sharp knife with cooking spray; cut into squares and dust with powdered sugar.
