VALENTINE CAKE

1 box white cake mix
1 (3 oz) pkg strawberry jello

Marshmallow icing
2 egg whites
1/4 cup sugar
1/8 tsp salt
3/4 cup light corn syrup
1 tbsp vanilla extract
1 1/2 cups flaked coconut
1 tbsp strawberry

Remove 1 tbsp jello. Add 1 1/2 cup flaked coconut to jello. Place in jar to shake coconut; set aside for icing.

Add remaining jello to dry cake mix ingredients and continue mixing cake according to package directions and bake in 2 heart shaped pans. Cool.

Icing: Beat egg white until frothy. Gradually add sugar and salt. Beat until glossy. Gradually add corn syrup and vanilla extract. Beat until spreading consistency. Ice cake and sprinkle with colored coconut.
