GORGONZOLA ALE SAUCE

5 lbs onion, diced
3/4 cup olive oil
1 1/2 cups amber ale
2 tsp dried thyme
Salt, to taste
Pepper, to taste
2 lemons, lemon zest, finely chopped
1/4 cup chives, minced
1/4 cup red bell pepper, minced
1 1/2 lbs Gorgonzola, crumbled

Caramelize onion in oil over low heat until reduced by half and golden brown. Stir in ale and season with salt, pepper and thyme; cook over low heat until reduced by one third. Stir in lemon zest; reserve.

To serve: Heat 1/3 cup onion beer mixture until it boils. Add 1 tsp chives and bell pepper; cook 1 minute. Remove from heat and stir in two oz crumbled Gorgonzola; serve immediately over grilled steak or chicken.
