THYME MUSHROOMS AND CHICKEN (Crock pot)

5 cups sliced assorted fresh mushrooms
1 medium onion, chopped
1/2 cup chopped carrot
1/4 cup diced sun-dried tomatoes
3/4 cup chicken broth
1/4 cup dry white wine or chicken broth
3 tbsp quick-cooking tapioca
1 tsp dried thyme, crushed
1/2 tsp dried basil, crushed
1/2 tsp garlic powder
Salt and pepper, to taste
3 lbs bone-in chicken thighs or drumsticks, skinned
4 1/2 cup cooked fettuccini, linguini or rice
In a crock pot, combine first 4 ingredients. Pour broth and wine over all. Sprinkle with tapioca and seasonings. Place chicken on top of vegetables. Cover and cook on LOW for 7-8 hours or on HIGH for 3 1/2 to 4 hours. To serve, arrange chicken and vegetables over pasta or rice; spoon juices on top. Serves 6
