Category: Pies - Cream and Custard
Prep Time:       Cook Time:       Total Time:

1 large graham cracker pie crust
1/2 cup water
2 pkg plain gelatin
1 (10 oz) can Bacardi Frozen Lime Margarita Mix
4 tbsp sugar
1/4 cup tequila
1 tbsp Triple Sec Liqueur
1 (12 oz) container whipped topping
3 drop green food color to tint filling to a pale green
Grated peel of one lime

Place crust in freezer at least 2 hours before making filling. Place water in a small bowl and heat in boiling in microwave, about 1 1/2 minutes. Add plain gelatin to water and stir until completely dissolved.

In a large bowl, combine margarita mix, sugar, food color, add gelatin mixture and stir well. Place mixture in refrigerate about 30-45 minutes to chill and slightly thickened. Add tequila and triple sec. Then the whipped topping to the margarita mix, reserve about 1 cup for garnish.

Using a mixer to incorporate the margarita mixture into the whipped topping, beat about 2 minutes until thoroughly combined and uniform in color. Pour mixture into the pie crust. Place pie in refrigerate and chill at least 2 hours and up to 5 hours, to give it time to set. Before serving, spoon remaining topping in center of the pie and garnish with grated lime peel.
