BAKED SICILIAN PASTA

6 oz dried medium shell macaroni
1 lb ground beef
2 cups chopped zucchini or 1 small eggplant, cubed
1/2 cup chopped onion
1 (6 oz) can Italian tomato paste with Italian seasonings
1 1/4 cups beef broth
1/3 cup Italian bread crumbs
2 tbsp grated parmesan and Asiago cheese
2 tbsp chopped fresh parsley
1 tbsp butter, melted

Cook pasta al dente; drain. Meanwhile, cook meat and vegetables in a skilled until meat is browned; drain fat. Stir in paste, broth and pasta. Bring to a boil. Spread mixture into a 2 quart baking dish. Combine bread crumbs, cheese, parsley and butter and sprinkle over top. Bake, uncovered, at 350 for 30 minutes or until heated through.
