BLACKBERRY PECAN STREUSEL PIE

Pastry for single crust pie

Filling
4 cups fresh or frozen unsweetened blackberries
1 cup sugar
1/3 cup quick-cooking tapioca
1 tsp ground cinnamon

Pecan Streusel
1/2 cu flour
1/2 cup sugar
1/4 cup cold butter, cut into small pieces
1/4 cup finely chopped pecans

Lin a 9 inch pie plate with pastry; then line pastry with a double thickness of heavy foil. Bake at 450 for 8 minutes. Remove foil. Bake 4-5 minutes until crust is set and dry. Reduce temperature to 375.

Meanwhile, in a medium saucepan, combine berries, and next 3 ingredients. Cook and stir over medium heat until mixture starts to bubble. Reduce heat and simmer filling, uncovered, 10 minutes, stirring the mixture frequently. Pour filling into the prepared crust. Top with streusel topping.

Topping: In a medium bowl, combine flour and sugar. Using a pastry blender, cut in butter until pieces are the size of small peas. Stir in pecans by hand.

Bake for 25 to 30 minutes or until the crust and topping turn golden.
